Public Class: Regional Salsas of Mexico with Chef Dave Leyva

Looking to elevate your next taco night from standard to spectacular? Join us at The Key Room for a hands-on culinary workshop dedicated to the ultimate accent of Mexican cuisine: the salsa.

From fresh and raw to deeply roasted and cooked, homemade salsas bring vibrant, versatile flavors to everything from simple rice and tortillas to grilled meats and charred veggies. Every region in Mexico boasts its own perfect pairings, and in this class, you’ll master the secrets behind them. We’ll get hands-on with traditional molcajetes, sharpen our knife skills, and work with an array of dried and fresh chiles. Plus, we’ll cover the essential basics of cooking perfect, homestyle Mexican beans.

What You’ll Make and Take Home:

  • Prepare and taste traditional Salsa Asada, oil-based Salsa Macha and tangy Tomatillo Avocado Salsa.
  • Prepare simple Corn Masa Sopes for tasting.
  • Take home a jar of Jalapeños en Escabeche (pickled jalapeños)

About the instructor: Chef Dave worked as chef and pastry chef in several notable restaurants before starting his journey as an instructor in the Wine Country. He has taught and mentored rising chefs at The Culinary Institute of America, Copia, and the original Williams-Sonoma store. He now takes pride in overseeing our Community Teaching Kitchen.
