Trained by London and Paris chefs in his 20s, Chef Nick landed in California in 2008 and launched Chou Chou in San Francisco. He later moved to the Castro to open the acclaimed Bisou, followed by Beso with a mix of French and Spanish cuisine.
Brigitte Bistro opened in 2024 after Chef Nick “fell in love with Petaluma.” The restaurant quickly gained a reputation for its traditional European warmth and carefully styled dishes like steak tartare with quail egg, pâté en croute and escargots with marrow bone.
